Ingredients

1/4 cup apple juice

1/4 cup tropical fruit juice (mango, papaya, kiwi etc...)

1 cup orange juice

1 Meyer lemon juice, freshly squeezed

1 pound bay shrimp, cooked and chopped

1/2 red onion, chopped

1 Organic Bell Pepper (red Bell Pepper) roasted and chopped

1 tablespoon cilantro, chopped

1 small organic apple (Granny Smith Apple) chopped

1 small Caribbean Red Papaya

Salt and pepper
Directions
Mix juices together and marinate shrimp while you prepare the remaining ingredients.
Mix shrimp, red onion, bell pepper, cilantro and apple together. Toss with juice and season, to taste, with salt and pepper.
Cut papaya in half lengthwise and remove seeds. Cut 1/3 of the small end off of the papaya and reserve for another use. Place remaining papaya on platter and ladle shrimp salsa into cavity.
Chill this salsa and serve with your favorite crackers on a warm day for a crisp and cool treat. Garnish with cilantro leaves.
