Ingredients

½ each Red Onion, diced

1 each Yellow Bell Pepper, diced

1 each Red Bell Pepper, diced

1 each Green Bell Pepper, diced

2 each Fresh Serrano Chiles, minced

2 cloves Melissa's Peeled Garlic, minced

1 each Fresh Roma Tomato, diced

2 11 oz. packages Melissa's Steamed Black-eyed Peas, rinsed

¼ cup seasoned rice vinegar

Sea Salt and Freshly Ground Pepper, to taste
Directions
In a bowl, gently combine all of the ingredients.
Refrigerate for 1 hour to incorporate flavors.
Recipe Note
- This is a great "Good Luck" dish for the New Year.
- Try it with some chips for an appetizer.
