2 Melissa’s Zucchini Squash - ends trimmed

2 tablespoons Extra Virgin Olive Oil – divided use

1 tablespoon Unsalted Butter

1 Melissa’s Perfect Sweet Onion, diced small

1 Melissa’s Yellow Squash - ends trimmed; diced small

6 Melissa’s Heavenly Villagio Marzano® Tomatoes – diced small

¼ cup Fresh Basil Leaves - cut into ribbons
-
¼ cup Shredded Mozzarella
-
3 cloves Melissa’s Peeled Garlic
-
1/8 teaspoon Kosher Salt
-
1/8 teaspoon Freshly Ground Pepper
-
Crushed Red Pepper Flakes (optional)

1 packet Melissa’s Four Cheese Sauce
Directions
Cut the 2 zucchinis into 4 pieces each. Carefully scoop out the flesh of the zucchinis, leaving a 1/8-inch wall and 1/4 -inch base. Finely chop the removed flesh and add to a bowl.
In a small sauté pan, heat 1 tablespoon of olive oil and melt the butter. Add the onions and caramelize them, about 5 minutes, stirring occasionally. Let cool. In the same pan, add 1 tablespoon of olive oil and sweat the yellow squash until just tender, about 3 minutes. Let cool.
Prepare a hot grill or grill pan.
Add the yellow squash and the next 6 ingredients and the pepper flakes, if using, and the caramelized onions to the bowl and gently mix. Fill the zucchini cups with the mixture. Squeeze the Four Cheese Sauce over the top of the zucchini cups.
Spray the grill or grill pan with BBQ non-stick cooking spray.
Place the zucchini cups on the grill and cook for 7-8 minutes or until heated through and you have nice grill marks on the bottom.
