Ingredients

1/2 bunch Yu Choy Sum

1/4 cup Dried Shiitake Mushrooms, reconstituted, sliced and patted dry

1/4 cup Organic Bell Pepper (Red) julienned

2 tablespoons shallots, peeled and chopped

2 Thai Chiles, cut in half seeds and membrane removed

1 clove organic garlic, peeled and chopped

1/4 cup Waterchestnuts, drained

1 1/2 tablespoons vegetable oil

1 tablespoon soy sauce

Salt and pepper to taste
Directions
Place a wok or wide frying pan over high heat until hot.
Add oil, swirling to coat sides. Add mushrooms, red bell pepper and shallots; stir-fry for 1 minute.
Add garlic, chiles and waterchestnuts; stir fry for 1 minute.
Add Choy Sum; stir fry for 1 minute.
Add soy sauce, toss with vegetables; continue to stir fry for 2 to 3 minutes or until vegetables are crisp tender. Serve immediately. Accompany with rice or noodles.
Recipe Note
May be served as a Vegetarian Main Dish.
