Ingredients

3 fresh Roma tomatoes

1 Hatch Sweet Onion or Perfect Sweet Onion - quartered

3 Melissa’s Tomatillos - husks removed, rinsed

4 cloves Melissa’s Peeled Garlic

2 tablespoons extra virgin olive oil

1/8 teaspoon kosher salt

1 tablespoon Melissa’s Green Hatch Pepper Powder

1 lime - juiced
Directions
Preheat the oven to 425ºF.
Place the first 7 Ingredients on a baking sheet and mix to incorporate.
Place into the oven and roast for 25 minutes, until charred. Remove from the oven and place into a blender.
Add the Hatch pepper, Hatch powder and the lime juice, blend and serve.
