1 large horseradish root
1/2 cup sugar
2 medium organic beets
1 cup water
2 tablespoons coarse salt
2 organic lemons, juiced (approximately 6 tablespoons)
Peel and wash horseradish and beets.
Place in food processor or blender until finely diced.
Pour into large bowl. Add salt, sugar, water, and lemon juice.
Add more beets if you want more color, and more water if you want thinner horseradish.
Store covered in refrigerator until ready to use.
Will keep about 5 - 7 days.
