1 tablespoon Extra Virgin Olive Oil

1 Melissa’s Perfect Sweet Onion

1/8 teaspoon Kosher Salt

1/8 teaspoon Freshly Ground Pepper

1 cup Cider Vinegar

¼ cup Brown Sugar

3 cloves Fresh Garlic - chopped

¼ cup Worcestershire Sauce

1 tablespoon Dijon Mustard

¾ cup Bourbon Whisky

2 (3 oz.) packages Melissa’s Dried Tart Cherries

2 cups Fresh Tasmanian Cherries - pitted
-
5 Roma Tomatoes – roasted

3 tablespoons Tomato Paste

1 tablespoon Smoked Paprika

¼ cup Cherry Liqueur
Directions
In a saucepan, melt the butter and heat the olive oil.
Add the onions, salt and pepper and caramelize, about 10 minutes, stirring them occasionally.
Add the rest of the ingredients, except for the cherry liqueur, and stir until well combined.
Bring the mix to a boil, stir in the liqueur, reduce the heat to a simmer and cook for 20 minutes.
Carefully blend the sauce with an immersion blender or in a blender until smooth.
