A fresh, crisp salad with a light dressing, perfect for summer or any hot day! This salad is very colorful and a nice accompaniment to white rice or angel hair pasta.
1 head organic Romaine Lettuce
1/4 head organic cabbage (use red cabbage)
3 tablespoons sesame seeds
1 small organic yellow onion
1 organic avocado, cubed
1/4 cup rice vinegar, seasoned
1/4 cup safflower oil
Salt and fresh ground black pepper to your liking
Toast sesame seeds in toaster oven or oven (place on aluminum foil). Be careful, they bun easily. Cook till brown less then 5 minutes (add these right before dressing).
Rinse and spin then chop romaine lettuce (place in medium bowl).
Thinly slice Red Cabbage (add to bowl).
Chop onion and add then avocado and sesame seeds.
Add salt and pepper (you don't need too much salt in this salad). Sprinkle with oil and vinegar. Toss and taste then add more if needed.
