1 pack steamed and cubed golden beets
½ red onion, peeled and thinly sliced (preferably on a mandolin)
1 head red frill lettuce, torn into bite-sized pieces
8 ounces goat cheese, crumbled or sliced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
Salt and pepper, to taste
In a large bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to create the vinaigrette.
Add the red frill lettuce to the bowl and toss to coat evenly with the dressing.
Gently fold in the sliced red onion, cubed golden beets, and goat cheese.

Golden beets offer a milder, less sweet flavor compared to red or pink beets. Feel free to experiment with a combination of colors if desired.
