For family dinner night or an easy weeknight meal with enough for lunch or leftovers. A nice dinner salad or tray of antipasti or crudité would round out the meal. Mangia!
Ingredients

1 pound lasagna noodles

1 (28-32 oz) prepared pasta sauce of choice

10 ounces Bright Lights Chard, chopped and cooked (see notes below)

1 1/2 cups ricotta cheese

4 cloves organic peeled garlic, chopped

2 eggs
-
1/4 teaspoon freshly grated whole nutmeg

Salt and fresh ground black pepper to taste

2 cups Parmesan cheese, grated
Directions
Cook noodles according to package directions. In a large bowl, mix chard, ricotta cheese, garlic, eggs, nutmeg, salt and pepper.
Place 1/4 of the noodles in a 9 x 13 pan. Cover noodles with chard mixture, spaghetti sauce, and cheese.
Repeat 2 more times then top with one more layer of noodles, and cheese.
Bake at 350°F for 1 hour covered with foil. Uncover and bake 30 more minutes. Enjoy!
Recipe Note
Chef's tip:
- Chard stems are edible as are the leaves. Make cleaning easier by stripping the leaf from the stem, then washing the leaves well in water as one would lettuce. Chop as directed. For the chard stems, think "celery" by washing then chopping into smaller pieces and add to layers as added texture.
- Store whole nutmeg in a small jar with lid and place in room temperature pantry. Using the fine grate side of box grater or use a microplane, grate as much as you will use at one time for optimum flavor.
