1 cup All-Purpose Flour
Sea Salt and Freshly Ground Pepper, to taste
2 Eggs
2 packages Melissa’s Coconut Clean Snax®, crushed
1 pound Sea Bass Fillets
1 Meyer Lemon, cut in wedges
Preheat the oven to 375ºF.
Season the flour with salt and pepper and place it, the eggs (slightly beaten) and the crushed Clean Snax® in separate containers. Set up a dipping station as follows: flour, then eggs, then Clean Snax®.
Pat the fish dry and spray a baking dish with cooking spray.
Take a fillet and dredge it in the flour, pressing slightly to completely coat the fish on both sides. Next, quickly dip the fish in the egg and then place it in the Clean Snax®. Do this on both sides and place in the baking dish. Repeat for the remaining fillets. Bake the fish in the preheated oven for 15-18 minutes, turning once, until the fish is completely cooked and golden brown. Place the cooked fish on a platter, squeeze the lemon over it and serve.
