¾ pound black beans, cooked, half mashed, half whole
2 Chipotle Peppers in Adobo, minced
1½ cups mayonnaise
Chipotle Adobo Sauce only (from the can) to taste
12 large tortillas
4 packages soy shreds, use 2 mozzarella flavor and 2 cheddar flavor
Heat your grill or grill pan. In a bowl, mix the beans and chipotle peppers together. In another bowl, mix the mayonnaise and chipotle sauce together. Spread the mayo mixture over one half of a tortilla. Top with the cheese and the beans. Fold over the tortilla. Carefully transfer to grill and cook until crisp and the cheese is melted.
Serve these quesadillas immediately to retain their crispiness.
