1 (1 1/2-inch thick) slice Melissa’s Sunshine Seedless Watermelon

1 (1 1/2-inch thick) slice Melissa’s Orange Seedless Watermelon

1 tablespoon Grapeseed Oil

Fresh Mozzarella Cheese Pearls

Fresh Basil Leaves

1/8 teaspoon Kosher Salt

1/8 teaspoon Freshly Ground Pepper

Melissa’s Pumpkin Seed Clean Snax® - crushed

Balsamic Reduction, to taste
Directions
Prepare the Watermelon: Cut the Melissa’s Sunshine Seedless Watermelon and Orange Seedless Watermelon into evenly sized cubes, approximately 1 1/2 inches thick, for skewering. Pat them dry with a paper towel to remove excess moisture.
Grill the Watermelon: Preheat a grill or grill pan over medium-high heat. Lightly brush each side of the watermelon cubes with Grapeseed Oil. Grill for about 2-3 minutes per side, or until grill marks form. Remove and let them cool slightly.
Assemble the Skewers: On each skewer, thread a cube of grilled watermelon (alternating colors if desired), a fresh mozzarella pearl, and a fresh basil leaf. Repeat this sequence until the skewer is filled, leaving a small gap at the top and bottom for easy handling.
Season the Skewers: Lightly sprinkle the assembled skewers with kosher salt and freshly ground black pepper for added flavor.
Add Crunch and Drizzle: Just before serving, roll or sprinkle the skewers in crushed Melissa’s Pumpkin Seed Clean Snax® for a crunchy coating. Finish with a drizzle of balsamic reduction to taste.
Serve: Arrange the skewers on a platter and serve immediately as a fresh and flavorful appetizer.
