This is an extra sweet and long red pepper variety that is large in both size and flavor. It is the perfect stuffing pepper, having few seeds and very minimal interior ribbing. Use it raw in salads for an added splash of vibrant color and distinctive taste. When sautéed, this pepper will absorb the flavors of the other ingredients in the pan. When roasted, the Aztec is truly something special.

Select peppers that have smooth, taut skin. Avoid peppers with wrinkles, blemishes, cuts or dark spots. Both the pepper and its stem should be bright in color and heavy for size. Whole peppers can be stored in refrigeration, unwashed, for up to one week in a plastic bag.
