A nice combination of flavors and umami from mushrooms. Pair this side dish with barbecue meats or seafood, and a nice off-dry Riesling or Chardonnay.
Ingredients

1 small organic yellow onion

1 organic apple
-
½ Organic Bell Pepper

1 fresh Serrano Pepper

1 stalk organic celery
-
1 sprig thyme, stems removed

1 pound mushrooms
-
½ cup Thompson Seedless Raisins

½ cup red walnuts, chopped

2 tablespoons butter
-
2 tablespoons extra virgin olive oil

2 tablespoons curry powder
-
1 pinch cayenne pepper

Salt to taste
Directions
Coarsely chop up the onion, apple, sweet and hot peppers, celery and thyme. Melt the butter and heat the oil in a saucepan.
Add all the chopped ingredients and the thyme, then stir in the curry powder and the cayenne, making sure it's evenly blended.
Stir in the mushrooms and raisins. Cover the saucepan and cook on a low heat for about 25 minutes.
Add the walnuts and cook until heated through, about 5 minutes. Season to taste with salt and serve.
Recipe Note
This recipe is an opportunity to try various mushrooms beyond the basic white button for texture and flavor. Just be certain to wipe away any debris with a paper towel before use. Oyster mushrooms are also known as trumpet mushrooms, and King Oyster mushrooms have a wonderful meaty texture. Neither taste like oysters. Slice them into rounds or thin planks. Shiitake and Portobello mushrooms should have the firm stems removed. Remove gills from portobellos. Cremini are baby portobellos and are quite meaty.
