Ingredients

4 slices bacon, thick-cut

1 pound Baby Dutch Yellow® Potatoes, cubed

1 medium Maui Onion, diced

2 cloves peeled garlic, minced

Salt and pepper to taste
Directions
Cook the bacon in a large skillet. Remove from the pan and drain on paper towels.
Add the potatoes, onion and garlic to the pan and cook over medium heat.
Cook, stirring occasionally, until potatoes are tender.
Crumble the bacon and add to the potatoes. Cook for 2 minutes and serve.
Recipe Note
I like to melt a little Gruyere cheese on top of my potatoes.
