10 (8 oz.) jars

16 Fuyu Persimmons, peeled, diced
6 cups granulated sugar
2 cups water
1 teaspoon pure vanilla extract
1 tablespoon lemon juice
1 tablespoon pectin
10 (8oz.) mason jars, lids & rings
In a large pot, add all of the ingredients, except for the pectin and bring to a boil, stirring often.
Lower heat and simmer for 1 hour.
Carefully blend the mixture with an immersion blender.
Stir in the pectin and bring back to a boil, stirring often.
Once boiling, turn off and remove from the heat.
Carefully pour the mixture into the mason jars and seal using proper canning/sealing techniques.
