Ingredients

1 cup soybeans (edamame)

1/2 cup unflavored soymilk

2 tablespoons cilantro, without stems chopped

2 cloves garlic, minced

1 teaspoon chipotle peppers, chopped (optional)

1 large avocado, ripe

2 teaspoons organic limes juice, freshly squeezed

Salt and fresh ground black pepper to taste

1 tablespoon cilantro, chopped for garnish
Directions
Cook edamame in salted boiling water for 5 minutes. Drain and cool to room temperature.
Combine edamame, soymilk, cilantro, garlic, and chipotle chiles in the bowl of a food processor. Process until mixture is very smooth, about 3 minutes. Set aside.
Peel and pit avocado and place in a medium mixing bowl. Add lime juice and mash with a fork, leaving small chunks.
Add edamame mixture and stir to combine. Season with salt and pepper.
Garnish with cilantro.
