2 cups fresh Tasmanian cherries, pitted and halved

Directions
In a small bowl or jar, whisk together olive oil, orange juice, balsamic vinegar, Dijon mustard, and honey. Season with salt and freshly ground black pepper to taste. Set aside.
In a large serving bowl, combine the winter greens, fennel, and red onion. Add the Tasmanian cherries, citrus segments, and toasted walnuts. Toss gently to distribute the ingredients.
Sprinkle crumbled goat cheese or blue cheese over the salad. Garnish with microgreens and fresh mint leaves for an extra pop of flavor and color.
Drizzle the dressing over the salad just before serving, tossing lightly to coat all the ingredients evenly. Serve immediately.
