2 Hot House Cucumbers
2 cups cider vinegar
1/4 ounce Dried Japones Chiles
1/2 cup sugar
Salt and pepper to your taste
First peel the cucumbers and slice.
Then toast the chiles in a fry pan just enough to bring out the smell, don't let them burn.
Julienne the onion.
Add all ingredients into a large bowl and mix well. Let mixture sit 2 hours or over night in the refrigerator before serving.
