This is great with freshly made tortilla chips.
Ingredients

1 (12.5 oz.) package Melissa’s Sliced Nopalitos

1/3 cup Water

1 teaspoon Kosher Salt

1/4 Melissa’s Perfect Sweet Onion - chopped

5 cloves Melissa’s Peeled Garlic
-
10 sprigs Fresh Cilantro
-
1/4 Melissa’s Perfect Sweet Onion - diced small

1 ripe Tomato - diced small
-
2 tablespoons Fresh Finely Chopped Cilantro
-
1 tablespoon Extra Virgin Olive Oil
-
1/2 Lime - juiced
-
1/2 Lemon - juiced
-
1 pinch Kosher Salt
-
1 pinch Freshly Ground Pepper
-
1/2 ripe Avocado - diced small
-
1/4 cup Crumbled Mexican Queso Fresco

Directions
In a pot, add the nopalitos and the next 5 ingredients and bring to a boil. Reduce the heat, cover and simmer for 30 minutes. Rinse with cold water, drain and set aside.
In a bowl, add the onion, tomato and the cilantro. Dice the nopalitos, add to the bowl and mix.
In a small bowl, whisk together the dressing ingredients. Add to the salad and mix. Top with the avocado and queso fresco and serve.
