3 (1/2 pounds) organic peaches, ripe and cut into 1 inch pieces
3/4 cup brown sugar
1/4 cup granulated sugar
2 tablespoons orange juice
1 tablespoon orange zest
1/4 teaspoon ground cinnamon
1 cup all-purpose baking mix
1/4 cup milk
1 tablespoon sugar
1 tablespoon butter or margarine, softened
Preheat oven to 400 degrees. In a large bowl mix together orange juice, orange zest, cinnamon and sugar and combine with the peaches. Transfer mixture to an ovenproof dish and bake for 30 minutes.
While cobbler filling is heating, prepare topping ingredients.
Combine all-purpose baking mix, milk, sugar and butter until soft dough forms. Drop by spoonfuls onto warm pie filling. Sprinkle with additional sugar if desired.
Continue to bake until topping is golden brown about 20 minutes.
Serve warm with vanilla bean ice cream.
