A easy and tasty treat using the best in-season lemons!
Ingredients

½ cup macadamia nuts, toasted and finely ground

1 cup all-purpose flour

1/3 cup confectioners sugar (plus more for garnish)

½ teaspoon salt

½ cup cold butter, cut into cubes

1 ½ cups sugar

½ cup all-purpose flour

¾ cup Meyer lemon juice (or if not in season, use our seedless lemons)

¾ cup flaked coconut

Directions
Preheat oven to 350°F. Line a 2 quart baking dish with parchment paper allowing an overhang for easy removal. Spray parchment with cooking spray.
Pulse crust ingredients together in a food processor until mixture resembles a coarse meal. Press crust mixture firmly into the bottom of the prepared pan in an even layer.
Bake crust for 20 minutes until lightly golden.
Reduce oven temperature to 325°F.
Meanwhile, whisk together eggs, sugar, flour, and lemon juice until smooth. Stir in coconut flakes. Pour filling over prepared crust. Bake for 30 minutes until filling is fully set and the edges are golden brown.
Allow bars to cool completely. Lift them from the pan using the parchment paper. Slice into 12 squares and dust with confectioners sugar before serving.
