Ingredients

¾ cup Granulated or Coconut Sugar

¾ cup Vegetable Oil

4 Eggs

1 tsp Vanilla Extract

1 cup Fresh Guava Pulp (1lb Guava, Seeds removed, Pulse in food processor to make pulp)

1 cup Grated Carrots

1 ½ cups All Purpose Flour

1 ½ tsp Baking Powder
Directions
Add Sugar and Oil into Mixing Bowl, whisk together until smooth.
Whisk in eggs one at a time.
Whisk in Vanilla Extract.
Whisk in Guava Pulp.
Lightly mix in Grated Carrots.
Mix AP Flour and Baking powder together.
Whisk in Flour mixture into wet mixture a little at a time until well blended and mixture is slightly thickened.
Line muffin tray with cupcake liners.
Pour Batter into each mould up to ⅔ full.
Bake in Preheated oven at 350° for 20 minutes turning pan once half way.
Allow to cool for 20 minutes before serving.
