The smokiness of grilling and the mild kick of Pico de Gallo Powder both add another dimension to the sweet taste of fruit, making these kabobs a bright and welcoming refreshing dessert. This is also a fun activity to do with children during the summer months.
Ingredients

8 wooden skewers, soaked in water

8 (1 inch cubes) apples

8 (1 inch cubes) pineapples

8 (1 inch cubes) watermelons

8 strawberries
-
8 green or red grapes

Melissa’s “Don Enrique” Pico de Gallo, to taste
Directions
Thread 1 piece each of the fruit onto a skewer. Repeat for the remaining skewers.
Spray them with cooking spray and place on a medium heat grill or grill pan.
Grill them for 2-3 minutes per side or until you get nice grill marks.
Remove them from the heat and sprinkle them with pico de gallo.
Recipe Note
Chef Tip:
- The day before: you may prepare ahead of time the cut fruit and place in separate bags or sealed containers. The apples should be sprinkled with lemon water to retard browning, or cut the day of preparation. The skewers can also be soaked ahead of time, then wrapped in plastic and refrigerated.
