1 pound green lychees, peeled and seeded
1 whole pineapple, peeled and cored then cut into small dice
½ cup water
½ cup sugar
1 pint ice cream or sorbet (your favorite)
Reduce water and sugar to ½, creating a simple syrup.
Then add the lychee meat and pineapple pieces, cook over low heat about 10 minutes. Remove from heat and puree.
Serve warm or chill, as desired. Pour over your scoop of ice cream or sorbet.
