Ingredients

6 Organic Bell Peppers

1/4 cup olive oil

4 tablespoons capers
-
4 tablespoons green olives, chopped

1 1/2 teaspoons wine vinegar

1 teaspoon sugar
-
1/2 teaspoon oregano, chopped or 1/4 teaspoon dried oregano

Salt and fresh ground black pepper to taste
Directions
Cut peppers into 1/2 inch slices.
Sauté in olive oil until soft.
Mix in the capers, green olives, wine vinegar, sugar, and oregano. Season with salt and pepper and simmer for 15 minutes.
Chill and serve as an appetizer or side dish.
