1 sheet puff pastry, thawed
1/2 cup Tasmanian cherries, pitted and diced
4 ounces Brie cheese, cut into small cubes
2 tablespoons honey
1 tablespoon balsamic glaze
1/4 teaspoon ground cinnamon (optional)
1 egg, beaten (for egg wash)
Fresh thyme leaves (optional, for garnish)
Preheat your oven to 375°F and line a baking sheet with parchment paper. Roll out the puff pastry sheet on a lightly floured surface and cut it into 12 equal squares.
Place each puff pastry square into the cavity of a mini muffin tin or directly onto the baking sheet. Gently press the center to form a small well. Add a cube of Brie to each square, followed by a spoonful of diced Tasmanian cherries.
Drizzle a small amount of honey and balsamic glaze over the cherries. If desired, sprinkle a pinch of ground cinnamon for a warm, spiced touch.
Bring the corners of each puff pastry square together to create a slightly enclosed bite, pinching lightly to seal. Brush the tops with the beaten egg for a golden, glossy finish.
Transfer the bites to the preheated oven and bake for 15–18 minutes, or until the puff pastry is golden brown and puffed.
Remove the bites from the oven and allow them to cool slightly. Garnish with fresh thyme leaves, if desired, for a hint of earthiness.
