The mango is known as the 'king of fruit' throughout the world. Once a native of India and cultivated in Asia for over four thousand years, the mango is grown in many countries including areas of Mexico, California and Florida.

There are now over 1,000 different varieties including Kent, Haden, Keitt, Ataulfowith the Tommy Atkins being the most widely purchased by American consumers. The Tommy Atkins was developed in Florida in the early 1920's. The fruit is a regular oval, has yellowish-orange with deep red to purple blush on its skin, and is juicy but firm with medium fiber.

An important fruit for many tropical countries, the Mango contains enzymes useful for tenderizing meats and also acts as a digestive aid. The fruit may be added to salads or used in vegetable or poultry dishes.

Interestingly, the vitamin content depends upon the variety and maturity of each fruit. Generally, when the mango is green the amount of vitamin C is higher--as the mango ripens, the amount of beta carotene (vitamin A) increases.
 
Melissa’s Mangos are hand selected for excellent quality. Choose fruit with a firm, unblemished skin and a fresh scent. To soften, leave at room temperature for a few days, until it yields to gentle pressure. Refrigerate once ripe for up to a week or more.

Wash, then peel and cut fruit away from the huge, flat seed in the center.
