Rare and exotic Star Apples get their name for their unique star appearance when sliced in half. Despite its name, Star Apples are not apples; the fruit is related to mamey sapote, and features a jelly-like texture and irresistible milky white juice that tastes like applesauce with hints of lychee, blueberries and grapes.
Star Apples are ripe when slightly wrinkled. It’s important to note that the skin is filled with inedible sticky white latex. To prepare, partially cut the fruit around the equator and then twist to pull the halves apart; scoop out the seeds and eat with a spoon. To avoid residual latex in the flesh, chill the fruit before eating. Star Apples are most commonly eaten as is, although the flavor also tastes delicious when made into ice cream or sherbet.
Store unripe fruit on the counter until the skin becomes slightly wrinkled. Ripe fruits can be stored whole in the fridge for several days.
