Shanghai or baby Bok Choy is a much smaller and, therefore, a more tender version of regular-sized Bok Choy cabbage. Bok choy has very distinct white stems or stalks and dark green leaves; it is one of the most nutrient-dense foods in the world.
Shanghai Leaves have had the white stems removed and is offered as a part of Melissa’s Asian Essential product line which consists of six staple Asian vegetables, packaged in convenient 1 lb. clamshell containers. Each of these staple ingredients has been uniformly trimmed and separated for quick preparation with absolutely no waste.
Raw, these leaves are deliciously mild and crunchy. Once cooked, they take on a delightful hint of sweetness. Use raw in salads or cooked in stir-fries, soups and sautés.
Choose firm stalks with fresh leaves. Avoid any brown spots. Store unwashed in the vegetable crisper of the refrigerator for up to 3 days. Wash thoroughly and rinse in cold water.
