A close cousin to the orange-colored yam, this striking shade of lavender is entirely natural, caused by the same red pigment that is in cherries and blueberries.
Purple yams not only hold color during the cooking process, but they turn an even darker shade of purple when cooked! Like all other fruits and vegetables with a dark red pigmentation, Purple Yams are also very high in cancer-protecting antioxidants.
Use in any recipe calling for sweet potatoes or yams, though this variety does require a longer baking time of about 90 minutes to achieve the same creamy moist texture as the familiar yams.
