These bright-colored edible roots are generally labeled either sweet potatoes or yams—but, in fact, true yams are part of a different botanical group.
The jewel variety is known for copper-colored skin and bright orange flesh. Like most orange-fleshed varieties, the flesh of the jewel sweet potato is very moist and sweet when cooked (although less sweet than a garnet sweet potato).
