A member of the parsley family, fennel is quite remarkable. It dates all the way back as far as 1500 B.C. and has been long enjoyed by the Italians, French and Greeks. With its bulbous base, celery-like stalks and dill-like leaves, one may wonder what to expect from this unusual looking vegetable.
Perfect for adding a bright snap to a variety of dishes, fennel is a very popular ingredient, one that you’ll love utilizing all year long. Its aromatic flavor is very unique with a slightly sweet and spicy licorice taste and a crunchy texture. All parts of this vegetable are entirely edible, from the stalks to the bulb to the fronds. You can shave or slice them thin and enjoy them as part of a salad. Braised or caramelized, fennel becomes tender and fragrant with an irresistible sweet, anise flavor. It also adds incredible depth to soups. This is one vegetable that is equally delicious raw or cooked!
Choose fresh looking Fennel with good color and a clean fresh scent. Avoid any brown spots or wilted stalks or leaves. Use soon after purchasing. If the leaves do become wilted, soak them in an ice water bath to revive them.
The preparation process of fennel is similar to that of celery. Cut off the stems and leaves, remove the knob-like core in the base and remove any strings.
