Melissa’s Baby Candy Cane Beets are about the size of a golf ball with a lush foot of rich green tops, named because of the “candy cane” stripes found when you cut the beets in half. The hearty mild flavor of candy cane beets is a tender variety and not as strong as common large beets. Baby Beets are much more tender and sweet than regular beets. Baby candy cane beets can be prepared by steaming, microwaving or sautéing. While they are also great for pickling, these beets make a colorful and hearty addition to soups and salads. Herbs make a wonderful combination with sautéed beets; Try adding parsley, basil, dill or chives with cooked beets to enhance any dish. The dark green tops offer a hearty flavor and can be cooked with the roots, although the root is usually more favored over the greens.
Melissa’s Baby Candy Cane Beets are picked when crisp and firm to touch. Choose beets with smooth skin. Store up to 2 week in a plastic bag in the refrigerator without tops. Store up to 1 week with tops. Cook beets before peeling.
