Cucumber Fan Making

Slice a cucumber in half lengthwise, then cut one of the halves into 1 - 1½ inch pieces. |

Using a sharp knife, thinly slice cucumber section (as shown in the illustration), taking care to leave one edge intact. |

Fold up every other slice as shown, tucking in ends to secure. Flare out the edges of the cucumber and use to garnish a serving platter. |
