Ingredients

3 pounds tomatoes - very ripe, flavorful, quartered

1 cup tomato juice - or as needed

1 scallion - minced, optional (1 to 2)

Juice of 1/2 lemon

Salt and freshly ground black pepper to taste
Directions
Place all the ingredients in a food processor and process to a chunky puree.
Transfer to a serving container and serve at once, or cover and refrigerate until chilled, if desired.
This recipe can be prepared in 45 minutes or less but requires additional sitting time.
Recipe Note
I like a lot of ingredients in my gazpacho so I would add some minced garlic, 1 or 2 diced lemon cucumbers, 1 chopped organic red pepper, and some fresh corn cut from the cob when I make it.
