Ingredients

To your taste cooking spray

1 teaspoon olive oil

3 cloves garlic, minced

Till desired Melissa’s Roma Tomatoes, chopped

2 pounds black beans
-
1/2 teaspoon red peppers, ground

1/4 teaspoon cilantro, chopped
Directions
Coat a large nonstick skillet with cooking spray. Add olive oil and place over medium heat until hot.
Add garlic. Sauté until tender.
Add chopped tomatoes; reduce heat and cook uncovered for 6 minutes or until mixture is slightly thickened.
Stir in beans, red pepper and cilantro. Cover and cook 5 min. or until thoroughly heated.
Garnish with fresh cilantro if desired. Serve over rice.
