Ingredients

1½ cups black beans
-
Sliced bacon, chopped & fried

1 clove organic garlic, minced

1 whole organic yellow onion, chopped

1 teaspoon chile powder
-
1 pinch salt
-
1 pinch Cayenne pepper
-
1 can chicken stock or broth
-
2 cups rice, cooked
Directions
Wash beans, cover with 5 cups water.
Soak overnight (or bring to boil, boil 2 minutes, cover and let stand 1 hour).
Boil beans in salted water until tender. Drain.
Add bacon, garlic and onion.
Season with chili powder, salt and cayenne.
Add broth to cover beans and simmer until beans fall apart. Pour over rice.
