Ingredients

2 pounds Baby Baker Russet Potatoes, cut into 1 inch pieces (or substitute with Baby Dutch Yellow Potatoes)

1/4 cup extra virgin olive oil

1/2 cup red onion, chopped

1/2 cup organic bell peppers (use red bell pepper), chopped

1/4 cup lemon juice, freshly squeezed

2 tablespoons oregano
-
2 teaspoons mint, chopped

2 teaspoons salt

3/4 teaspoon ground black pepper
Directions
Steam potatoes just until tender, about 10 minutes. Transfer potatoes to large bowl. Add oil to potatoes and toss to coat.
Mix in onion, bell pepper, lemon juice, oregano, mint, salt and pepper.
Can be made 4 hours ahead. Cover; chill. Let stand at room temperature 1 hour before serving.
