Ingredients

1 large Cucumber grated

1 large Organic Tomatoes peeled and diced

1 clove Organic Garlic minced

8 ounces Plain Yogurt
-
8 ounces Sour Cream
-
1 teaspoon Cumin ground
-
2 Anaheim Peppers (Or Hatch Pepper if in season) chopped

Salt and Fresh Ground Black Pepper to taste

Pickling Cucumbers (see notes below) sliced into sticks, to dip
Directions
Sprinkle cucumbers with salt and set aside, 30 minutes.
Wash the excess moisture off the cucumber and drain well, squeezing out any moisture.
Mix all ingredients together in bowl, season well and chill before serving. Dip crunchy cucumber slices into dip and enjoy!
Recipe Note
If Pickling Cucumbers are not available, try Melissa's Mini Cucumbers which also require no peeling and contain edible seeds.
Squeezing as much of the moisture out of grated cucumbers will determine the thickness (viscosity) of the yogurt mixture.
