1/4 cup brown sugar
2 teaspoons ginger root, finely minced
2 teaspoons minced garlic
1 dried chile pepper, crushed to taste
1/2 teaspoon canela (cinnamon sticks), crushed
1/4 cup water
Combine all ingredients in a small sauce pan and mix well. Bring to a boil.
Allow to cool slightly, then brush on your favorite meat, ham, ribs, or chicken; cook as your recipe instructs, basting periodically with the glaze.
