This is a refreshing salad featuring Asian Hami variety Melon. Hami is a firm-fleshed melon with sweet flavor and light orange color. Enjoy!
Ingredients

3 tablespoon organic lime juice

1 teaspoon sugar

1 teaspoon ginger root, minced, peeled

1/4 cup vegetable oil

10 ounce watercress
-
2 1/4 cups Hami Melon, 1/2 inch pieces

2 1/4 cups Organic Mini Seedless Red Watermelon, 1/2 inch pieces

Sliced almonds as needed, toasted
Garnish
Directions
Whisk lime juice, sugar, and ginger in large bowl to blend.
Gradually whisk in oil. Season dressing with salt and pepper.
Add watercress, watermelon, and Hami Melon to dressing and toss to coat.
Transfer salad to plates.
Garnish
Sprinkle with sliced almonds and serve immediately.
