This is a great salad for a BBQ or picnic!
Ingredients

1/2 cup vegan mayonnaise
-
4 tablespoons seasoned rice vinegar

4 cups Napa Cabbage, shredded

4 cups red cabbage, shredded
-
1/8 cup organic carrots, shredded
-
2 tablespoons Maui Onion, minced
-
1 pinch kosher salt
-
1/8 teaspoon Melissa’s Organic Rainbow Peppercorn Grinder
Directions
In a bowl, combine the vegan mayonnaise and rice vinegar and set aside.
In a mixing bowl, combine the cabbages, carrots and onions.
Add the dressing ingredients and toss to combine.
Season with the salt and pepper, cover and refrigerate for an hour.
