Ingredients

1 Melissa's Perfect Sweet Onion, peeled, cut into rounds

2 large carrots, ends trimmed, halved lengthwise

2 tablespoons extra virgin olive oil

Sea salt & freshly ground pepper to taste

1 pound small elbow macaroni, cooked, drained, rinsed with cold water
-
½ cup raisins
-
3 Melissa's Mini Cucumbers, ends trimmed, quartered lengthwise, chopped
-
1 pint Cherry or Pear Tomatoes, halved
-
2 boxes Steamed Artichoke Hearts
-
1 small can sliced black olives, drained
-
2 packages Melissa's Pine Nuts, toasted
-
½ lemon, juiced
-
1 tablespoon smoked paprika
-
½ cup crumbled feta cheese
-
1¼ cups Italian Dressing
Directions
Prepare a hot grill.
Brush the onion and carrots with olive oil and season with the salt and pepper.
Place them on the grill and cook until you get nice grill marks and the carrots are still crisp.
Remove from the grill, let cool and chop.
In a large bowl, mix together the macaroni and the next 8 ingredients.
When the carrots and onions are cool, add them to the bowl.
Mix in the cheese and dressing and check the seasonings. Serve or store in the refrigerator.
Recipe Note
The toasted pine nuts give this dish a unique nutty flavor.
