Grilled Saturn Peach and Mixed Berry Salad with Citrus Vinaigrette

Ingredients

2 Saturn Peaches, quartered (cutting around the pit)

Extra virgin olive oil as needed

Granulated sugar as needed

1 package Baby Spring Greens Mix
-
1/2 cup crumbled bleu cheese
-
5 ounces blueberries
-
5 ounces raspberries
-
1 cup orange juice
-
1/4 cup lemon juice
-
1/4 cup lime juice
-
1/2 cup balsamic vinegar
-
1 tablespoon granulated sugar
-
Kosher salt to taste
-
Pepper to taste
-
1 pinch cayenne pepper
-
1/3 cup extra virgin olive oil
For the Vinaigrette
Directions
Brush the peaches with the olive oil and sprinkle with the sugar.
Place the peaches on a hot grill pan or barbecue.
Cook them until you achieve nice grill marks.
Remove them from the grill and set aside to cool.
In a large bowl, combine the spring mix, bleu cheese and berries.
To make the vinaigrette
Combine the rest of the ingredients except for the olive oil.
Once mixed well, slowly whisk in the olive oil.
Drizzle the vinaigrette over the salad and gently mix to coat all of the greens. You may or may not need all of the vinaigrette.
Place the salad on separate salad plates.
Slice the peaches and arrange on top of the salads.
Recipe Note
I like this salad as a side dish with marinated beef tenderloin.
