Melissa's Sun Dried Tomato Pesto adds a nice zing to this fresh wrap.
Ingredients

1 tablespoon Sun Dried Tomato Pesto
-
1 whole grain tortilla or wrap of choice
-
1/2 cup black beans, cooked
-
1 cup organic carrots, shredded and sauteed in garlic and shallots; cooled
-
1 cup Veggi Chicken Strips, sliced Tempeh, or vegetarian crumbles
-
1 leaf Organic Romaine Hearts
-
2 slices non-dairy cheese
-
Melissa's Hatch Salsa (Hot)
Directions
Lay tortilla flat on work surface. Place romaine lettuce down on tortilla first to create a moisture barrier.
Add the rest of the ingredients on the lettuce and roll it like a burrito only about 1 inch thick.
Then slice on the bias with a serrated knife. Serve with Melissa's Salsa.
