Ingredients

4 Melissa's Crepes
-
1/3 cup small diced Green Bell Pepper
-
1/3 cup small diced Red Bell Pepper
-
1/3 cup small diced Yellow Bell Pepper

1/3 cup small diced Melissa's Maui Onion or Perfect Sweet Onion

1/2 cup sliced mushrooms
-
1 tablespoon extra virgin olive oil
-
1/8 teaspoon Kosher salt
-
1/8 teaspoon freshly ground pepper
Directions
In a large saucepan, heat oil and sweat onions until translucent and aromatic.
Add mushrooms, salt and pepper and cook thoroughly.
Add all of the bell peppers and cook slightly. Be careful not to overcook them or they will lose their crispness.
Fill and roll the crepes. Top with your favorite sauce.
Recipe Note
Melissa’s Hollandaise Sauce would go well with these!
