A hearty and rich vegan burger with smokey aioli and veggies to dip!
Ingredients

24 oz organic spinach, washed, spun dry and finely chopped

1 quart white bean hummus

1 tablespoon salt

1 pound panko
-
1 pound shiitake mushrooms, stems removed, caps small dice

2 tablespoons olive oil
-
1 tablespoon roasted garlic, mashed

1 teaspoon chipotle pepper powder
-
1 cup light mayonnaise
-
1 tablespoon roasted garlic puree
-
1 tablespoon organic lemon juice
-
1 teaspoon salt
-
1 teaspoon pepper
-
24 oz organic spinach
-
1 pound baby broccoli spears, trimmed and steamed

1 pound organic red bell pepper, seeded and sliced

Directions
For the Burgers
In a large mixing bowl, Mix the spinach,hummus, salt and panko. Chill.
Sautee mushrooms with olive oil and garlic. Chill.
Add mushrooms to mixing bowl.
Sear the burgers for 1 minute each side on the griddle, then put them on a baking pan and bake for 15 minutes at 350 degrees.
Remove from oven and chill.
Chipotle Aioli
In a blender, mix the lemon, garlic,salt and pepper.
Fold in the mayonnaise. Add the chipotle. Mix well. Chill.
To Plate
Divide spinach among 8 plates. Lay the Spinach Burger on top. Place a dollop of chipotle aioli on the side with steamed Snap Peas and raw Red Bell peppers.
