Ingredients

2 tablespoons butter or margarine

16 ounces Shiitake mushrooms - finely chopped

1 cup bread crumbs, dry

1 package Soyrizo or vegetarian breakfast sausage (in your produce case)

8 large eggs or egg substitute (like Egg Beaters - 16 ounces)

3 tablespoons organic parsley, chopped

1/4 teaspoon red pepper flakes
Directions
Melt margarine in large nonstick skillet on medium-high heat. Add shiitake mushrooms. Cook and stir about 10 minutes.
Remove from heat; stir in bread crumbs.
Press mixture onto bottom of baking dish, sprayed with non-stick cooking spray. Set aside.
Cook vegetarian sausage in nonstick skillet on medium heat about 2-3 minutes, breaking sausage into small pieces and stirring frequently until lightly browned.
Remove from heat; stir in parsley and red pepper. Spread sausage mixture over mushroom mixture. Pour egg over sausage mixture.
Bake 25 minutes or until mixture is set. Serve hot.
